The evocative goblet of the famous and secular Nerello Mascalese, made into a white sparkling wine in the Cavanera cellar on Etna, is an example of absolute style. The sparkling wine is produced according to the "blanc de noir" method to enhance the organoleptic characteristics of Nerello Mascalese. After soft pressing of the destemmed grapes, vinification takes place inside the cellar, which is located in a typical 17th-century Etnean baglio. Gaudensius is a sparkling wine with a refined, fine-grained, continuous and persistent perlage, characterized by colors with luminous gold hues, with a complex and, at the same time, rarely elegant taste.
