Grillo cultivated in the Borgo Guarini Estate fully expresses the peculiarities of its terroir of origin. The hilly climate, with its greater temperature variations compared to the coastal area, endows these grapes with a richer and more intense aromatic profile, composed of thiols and aromatic precursors. It is the rising star among Sicilian wines, usually cultivated near the coast. Firriato, however, has chosen to cultivate it in the hilly areas of the Borgo Guarini Estate, which benefits from a microclimate subject to greater temperature excursions that, in combination with the action of the wind, allows for a wine with a broad aromatic profile and greater freshness during vinification, when compared to other wines made from Grillo grapes traditionally cultivated along the coast.
