The Zibibbo vineyard of Calamoni grows a few meters from the sea of Favignana. The harvest is followed by the transportation of the bunches in wooden crates by fishermen's boats that travel from the island to the mainland to begin vinification. Favinia Passulé is characterized by an organoleptic profile with balsamic notes that delicately balance the saline hints. During the winter months, the plants are protected from the strong wind by a barrier of trellises, but no barrier is possible during the summer to protect the ripe and very sweet grapes from the greed of the birds that inhabit the island. For this very reason, Firriato adopts integrated pest management in the vineyard, a technique that preserves the delicate island ecosystem through sustainable measures.
